Red Velvet Cake with THE Best Frosting

Did you miss me?  I have truly missed you!  I have been a little under the weather for the past few days with a pulled muscle in my shoulder and bronchitis to boot.  The doctor even remarked that this has not been my year and I must say, “I agree!”  I have come to the conclusion that I am not able to do the things I used to do.  Anyway, I am better and hope I have the mishaps behind me.

Saturday is our friend, Terri’s birthday so I made her a Red Velvet Cake with THE Best Frosting you will ever taste.  It is not your typical cream cheese frosting, but is much lighter and fluffier…almost “cloud-like.”  Anyway, Happy Birthday Terri…I hope you enjoy your birthday and your cake.

An old fashioned favorite with icing so good it will make you crave more.
Recipe type: Dessert
Yield: 18-20 servings
  • ½ cup butter, softened
  • 1½ cup sugar
  • 2 eggs, room temperature
  • 2 (1-ounce each) bottles red food coloring
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • 2¼ cups all-purpose flour
  • 2 tablespoons unsweetened baking cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
Preparation Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Prepare two 9-inch round cake pan by greasing and flouring; set aside.
  2. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in the food coloring, vinegar, and vanilla extract.
  3. In a separate bowl, combine the flour, cocoa, baking soda, and salt; add to creamed mixture alternately with buttermilk beating well after each addition.
  4. Pour into prepared pans and bake for 20-25 minutes or until a toothpick inserted near the center comes out clean.
  5. Cool for 10 minutes before removing from pans to wire racks to cool completely.
  6. Spread frosting (see recipe below) between layers and over the top and sides of cake.

In all my years of cooking, I have never tasted a frosting as wonderful as this one.
Recipe type: Dessert
Yield: 1 cake
  • 1 cup milk
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • 1 cup white sugar
  • 1 stick Imperial margarine
  • ½ cup shortening
  • 2 teaspoons vanilla extract
Preparation Instructions
  1. In a medium saucepan, add the milk, flour, and salt; cook, stirring constantly until consistency of pudding, then remove from heat and beat with a whisk until there are no lumps. Place in refrigerator, covered with plastic wrap until cold.
  2. In a large bowl of a mixer, cream the sugar, margarine, shortening, and vanilla extract. Cream for 5 minutes, then add the refrigerated flour mixture. Beat until there are no sugar crystals, approximately 3-5 minutes.
  3. Spread on cool cake rounds with a long off-set spatula.
