Have you noticed that I have been away for a long while? Let me explain over a cup of coffee and some Magic Cookie Bars.
After the death of my father-in-law the memories of my late husband Kevin, came flooding back in a big way and reminded me of what a big void his absence made in my life (barely over three years now) and I became very lonesome and melancholy. I also came to realize how few comments and words of encouragement I receive on my blog which causes me to be frustrated at myself and; therefore, makes me question whether blogging is worth it. I guess you could call it “Blog Burn-Out!” Funny though, the whole time I was absent from posting on my blog, the more I missed it…kind of like missing an old friend or missing Kevin. When you care about something and it is gone, you miss it. And faithful readers, when I received comments from you asking why I stopped blogging the juices started flowing…did you know you are the wind beneath my wings? ~sigh~
So I am back and ready to fill you in on what have I been up to since April? I am still working my full-time job and can see the retirement light at the end of the tunnel growing brighter, but who knows…I might miss that too! Retirement is scary! On weekends and after work though I have been mostly working in my yard…”whipping” it into shape, you might say. When the weather is nice, I love to work outside and leave the inside for those colder months. Interior posts are coming in the future!
I suspect, much to my brother-in-law Klint’s dismay, I have been planting several perennials in the nooks and crannies of the yard so that someday a lush garden will emerge (or that is the plan). Why would my brother-in-law care about what I plant in my yard, you ask? He is so sweet to mow my yard on a regular basis and I know how difficult mowing around all the assorted plants can be (or that is what my Kevin used to tell me). 🙂
Today and to prove that my oven is not broken I “whipped” up some Magic Cookie Bars. They are super easy to make and taste as though you fussed for hours. I rummaged through my recipe box and finally found one that called for ingredients I had on hand…Magic Cookie Bars was the recipe of choice.
Here is the recipe (which BTW came off the back of the graham cracker crumb box).
- ½ cup unsalted butter
- 1½ cups graham cracker crumbs
- 1 (14-ounce) can sweetened condensed milk
- 1 (6-ounce) package semi-sweet chocolate chips
- 1½ cups flaked coconut
- 1 cup chopped nuts (I used pecans)
- Preheat oven to 350 degrees Farenheit. In a 13 x 9-inch baking pan, melt the butter in the oven (making sure it does not burn).
- Sprinkle graham cracker crumbs over the melted butter. Pour the condensed milk evenly over the graham cracker crumbs.
- Top evenly with the remaining ingredients. Press down gently.
- Bake 25 to 30 minutes or until lightly browned. Cook thoroughly before cutting into bars.
- Store, loosely covered at room temperature.
