It is totally crazy to me how fast the days fly by and equally as crazy is the roller coaster weather. One day last week, when it was raining and the overnight temperature was to dip into the low twenties, I whipped up this Oyster and Potato Soup.
Although the formative years of my childhood were in Southeast Missouri, my twenty-somethings were spent in sunny California. During my time in California, I became spoiled with the abundance of gorgeous fruit AND an avocado tree in the backyard of the property where I lived. I woke up this morning all inspired…inspired to make the best of the day! Perhaps it was the sunshine or maybe the great night’s sleep! I took a short reprieve from posting to turn one year older and without a doubt it was painful! Not that it was a mile-stone birthday, but I truly felt my age and was glad to see the day pass. Breezy and Beautiful! Those are the words to describe the weather outside today. Walk outside and the semi-cool breeze will mess with the hair on your head, for sure. Although, the local weather is predicting an early spring, I have a feeling that “Old Man Winter” is not finished with us.
