So far, this week has been a wonderful one…a preview of what I imagine my retirement will be someday! I have actually been on a stay-cation and I might add, my favorite type of vacation. My philosophy is a busy week is a happy week and these Banana-Oat Breakfast Cookies will help me get a hearty breakfast in a hurry, so I can get busy.

Doesn’t everyone love the taste of lemon (e.g., Lemon Chicken, Lemon Meringue Pie, Lemon Drop candy, Lemon Bars, etc.), so why not Lemon Drop Cookies? I for one, love the taste of lemon or lime…a citrus flavor cleanses the palette and is so refreshing.
