Do you know the feeling of craving something so bad that it is all you can think about? Today’s craving was Italian. I had all the ingredients on hand and even had homemade spaghetti sauce (see recipe here) in my freezer, so it was really a “no brainer”…Baked Spaghetti cured the latest craving!
As a child growing up in Missouri, I never tasted foods such as shrimp, kale, artichokes, or risotto. It was only a few years ago, when I discovered the Food Network, that I ever considered cooking with them. I feel compelled to ask, “what is up with the weather?” I normally, try not to dwell on the weather because there is little to nothing a person can do about it, but I cannot control myself…the rain is dampening my spirit! On the bright side though, rainy weather is the perfect back-drop for hot soup and a sandwich like this Blackened Chicken Sandwich with Mission Fig Mayonnaise.
