I feel compelled to ask, “what is up with the weather?” I normally, try not to dwell on the weather because there is little to nothing a person can do about it, but I cannot control myself…the rain is dampening my spirit! On the bright side though, rainy weather is the perfect back-drop for hot soup and a sandwich like this Blackened Chicken Sandwich with Mission Fig Mayonnaise.
Today I was given the privilege of spending the afternoon visiting with former co-workers who are also friends. The luncheon was arranged due to the fact that one of the individuals is sadly dying of cancer and has only weeks to live. Bob has only weeks to travel to the states/cities he has previously worked and lived to say goodbye to those who have made an impact in his life. WOW, what an awesome thing to do! [Read more…]

The lunch of choice today was Teriyaki Tuna Bites on Pumpkin Spice Bread! Even as incapacitated as I am for twelve more days, I was wishing for tuna salad on toast for lunch. For me, the long President’s Day weekend began with a scrumptious breakfast of bacon, eggs, whole-wheat toast, and sliced tomatoes. Once I was on a roll, breakfast was followed by a batch of Chocolate Chip Cookies, Chocolate Almond Bark Scramble, a pot of Kale and Potato Soup, Tuna Salad, and a basic meatloaf. Meatloaf is one of those comfort foods that many people shy away from because of the word “loaf.” But I have to ask you, what is better than a meal made from left-over meatloaf, like my Loaded Meatloaf Sammie.
