Happy New Year! Everyone will be bidding goodbye to 2016 and welcoming 2017 tonight. Personally and selfishly, I am happy to see 2016 finally come to a close…it has not been a good year for me. I was really busy today working at my mom’s new house. Busy or not, I still had to put dinner on the table, but keep in mind that I have not been to the grocery in two weeks. Confident I would find some inspiration, I poked around in the freezer and finally found two Cornish Game Hens.
My friend, Betty gave me this recipe with the promise that it would be one of the best cakes ever. She was right and it is truly a chocolate lover’s dream.
OK, I am on a “Classic” kick, but to me the word “classic” means, I know how to make the dish without dragging out a recipe. And in many cases, it also means I have all the ingredients without going to the grocery. Lastly and in this case, it means the slow-cooker did all the work…I’m still busy today and needed an answer for dinner! Viola…Classic Beef Roast with Veggies (some call it Pot Roast).
