Have you ever thought about a recipe all day with every intention of coming home and making the dish? That would be me today! Today is Labor Day (a National Holiday in the U.S.) and I am sure many of you are preparing to grill something for an outdoor feast with your friends and family or maybe you are on the lake soaking up the sun and brought along a picnic packed with delicious foods! With that grilled meat or picnic meal, a nice cool salad might be a good accompaniment and I suggest this Corn Salad to perk up your meal! It is packed full of fresh flavor from the garden and very easy to put together.
I found the main ingredients of corn, cucumbers, and tomatoes in my refrigerator and started chopping things up until I had a very delicious summer salad.
I am crazy about this Waldorf Salad which is similar to my Chicken Waldorf Salad in a previous post, but without the chicken of course! When you are indulging on lots of heavy foods, such as dressing (or stuffing, depending on where you live), casseroles, gravy and tons of desserts, it is a refreshing break to eat a light, crunchy salad.
