As a child growing up in Missouri, I never tasted foods such as shrimp, kale, artichokes, or risotto. It was only a few years ago, when I discovered the Food Network, that I ever considered cooking with them. Until that time, it was good old southern cooking (fried chicken, pork chops, biscuits, gravy, etc.). I have become somewhat more adventurous, for example Shrimp Risotto with Mushrooms and Spinach. Today we celebrated the birthday of my mother-in-law, we so lovingly refer to as Moomaw. The theme of the potluck meal was Tex-Mex food and so I took the opportunity to try out my Southwestern Beans and Rice on the family. [Read more…]
Tonight’s dinner, Ham Fried Rice, was inspired by a frequent visitor to All Things Home Related, who recently contacted me about the Chinese Egg Rolls listed as coming soon…not to mention there was ham in the refrigerator calling out to be used.
I was really busy today working at my mom’s new house. Busy or not, I still had to put dinner on the table, but keep in mind that I have not been to the grocery in two weeks. Confident I would find some inspiration, I poked around in the freezer and finally found two Cornish Game Hens.
