Saturdays and Sundays are the perfect time for a scrumptious breakfast. Today’s treat was Peanut Butter and Banana French Toast Sticks. I love the combination of peanut butter and banana so when I noticed over-ripe bananas in my pantry, the rest was a no-brainer!
The new year offers a fresh start and gives everyone a new beginning point for twelve months. Typically, the new year also brings the desire to organize and rid your personal space of clutter. Just like everyone else, I am in the process of organizing and de-cluttering my spaces. However, even the most focused person has to take a break once in awhile and my break consisted of baking these Frosted Banana Bars.
So far, this week has been a wonderful one…a preview of what I imagine my retirement will be someday! I have actually been on a stay-cation and I might add, my favorite type of vacation. My philosophy is a busy week is a happy week and these Banana-Oat Breakfast Cookies will help me get a hearty breakfast in a hurry, so I can get busy.

My employer typically gives each employee big boxes of fruit and vegetables (whatever is in season) a couple of times per year and for me it could not be any nicer of a “thank you for your dedication” gift. I love getting the assortment of garden bounty and find it a challenge to think of different ways to use the items. This year we received a large container of blackberries in the box. And I mean the berries were huge and sweet, so from that container I came up with Banana-Blackberry Pound Cake. [Read more…]
