As a child growing up in Missouri, I never tasted foods such as shrimp, kale, artichokes, or risotto. It was only a few years ago, when I discovered the Food Network, that I ever considered cooking with them. Yet another stuffed mushroom recipe from my Recipe Box…have I told you that I love mushrooms? Portabellas Stuffed with Cheese, Artichokes, and Spinach are a mushroom lovers dream come true!
Generally, our evening meal on Sundays consist of some type of appetizer. We have already eaten a big meal for lunch and so most of the time we opt for a snack or appetizer for dinner. This Cheesy Spinach and Artichoke Dip is a Sunday favorite of ours!
