The lunch of choice today was Teriyaki Tuna Bites on Pumpkin Spice Bread! Even as incapacitated as I am for twelve more days, I was wishing for tuna salad on toast for lunch. Not your ordinary Tuna Salad and not your ordinary Shrimp Salad (and we love both). Put the two salads together and you have got an unforgettable combination that your taste-buds will thank you. Tuna-Shrimp Salad Supreme is delicious all its own, but served on Rosemary-Ciabatta bread pushes it over the top.
A Hot Tuna Melt is a delicious change to an otherwise, ordinary tuna sandwich. I substituted a sweet juicy apple for the usual sweet pickle relish to cut down on the sugar content and to put a twist on the tuna. I remember making Hot Tuna Melts in Home Economics class in High School. I am not sure whether Home Economics is even offered in High School anymore…or maybe it is not called that anymore.
