A Cowboy Cookie is usually huge and heartily crammed with chocolate chips, oatmeal, nuts and peanut butter. In an attempt to use a deli container of sliced fresh mango that is patiently waiting in my refrigerator to be loved and to rid myself of some serious boredom, I thought I would shake up an existing quick bread recipe of mine and create this Tango Mango Bread with a tropical twist. The result was awesomely and tropically delicious!
Let me set the scene…picture this…a super bored woman hopping around in her kitchen (to keep from applying weight on a newly broken ankle and a cast half-way up her leg), trying to throw ingredients together to create an wonderful tasting bread.

One day I was asked by a fellow co-worker whether I could make Cranberry-Walnut Chicken Salad like the version sold by Sam’s Clubs. I had only had Sam’s Club chicken salad once before, but I told her I was willing to give it a shot. This recipe is the result of my efforts and she agreed it was as good as the store bought.
Bran muffins are an old-time favorite and these taste exactly like the cereal of the same name. This recipe originated from the back of a cereal box, but I have changed up the recipe many times by adding different types of ingredients each time I make them.
